For game mechanic purposes, when something refers to your character's gender, that means your character's biological or assigned sex at birth. If we were coding the game from scratch we would probably use "sex" or some other data type, but in ~1993 that was the term video games typically used for it. This is a game mechanic choice like your fantasy race that is needed for code supported purposes and game balance.

Despite this game mechanic choice, the ability to express your gender and sexual identity however you choose is fully supported in game. These aspects of your character are completely up to you as far as how you identify, how you behave, the types of relationships you engage in, etc. There are no significant game mechanics tied to gender other than being a dryad. By lore, dryads are female in gender, sex, and gender/sexual identity.

The Amborel race has a completely fluid gender. See: help amborel
